Feta Tomato Zoodle Salad

4 medium zucchinis

1 cup cherry tomatoes, halved

1 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/3 cup black olives, pitted and sliced (Kalamata preferred)

1/4 cup fresh basil leaves, torn

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper to taste

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchinis. If you don’t have a spiralizer, you can use a julienne peeler or a box grater to achieve similar results. Once done, gently pat the zoodles dry with a paper towel to remove excess moisture.

    Mix the Ingredients: In a large bowl, combine the zoodles, halved cherry tomatoes, crumbled feta cheese, chopped red onion, olives, and torn basil leaves. Stir gently to combine, being careful not to break the feta too much.

      Make the Dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined. Adjust the seasoning to taste.

        Dress the Salad: Pour the dressing over the zoodle mixture and toss gently to coat. Make sure all the ingredients are well mixed and the zoodles are coated in the dressing.

          Chill and Serve: Let the salad sit for about 10-15 minutes at room temperature or refrigerate for up to 30 minutes before serving. This allows the flavors to meld beautifully. Serve chilled or at room temperature.
