1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely chopped

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup kalamata olives, pitted and sliced

2 tablespoons extra-virgin olive oil

1 tablespoon red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Prep the Ingredients: Start by draining and rinsing the chickpeas under cold water. Dice the cucumber, halve the cherry tomatoes, and finely chop the red onion. Crumble the feta cheese and chop the fresh parsley.

    Combine Salad Base: In a large mixing bowl, combine the chickpeas, diced cucumber, halved cherry tomatoes, chopped red onion, and crumbled feta cheese. Add the sliced kalamata olives and chopped parsley to the bowl.

      Make the Dressing: In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Toss the Salad: Pour the dressing over the salad mixture in the large bowl. Gently toss all the ingredients together until well coated with the dressing.

          Chill and Serve: For best flavor, let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. Before serving, give it one last gentle toss and adjust salt and pepper, if necessary.
