Family-Friendly Veggie Quesadillas with Salsa Verde

4 large whole wheat tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or mozzarella)

1 cup bell peppers, diced (mix of colors for fun!)

1 cup zucchini, grated or finely chopped

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup black beans, rinsed and drained

1/4 cup red onion, finely diced

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

2 tablespoons olive oil (for cooking)

Salsa verde, for serving

Prep the Veggies: In a large mixing bowl, combine diced bell peppers, grated zucchini, corn, black beans, and red onion. Season with garlic powder, cumin, salt, and pepper. Mix well to combine all ingredients evenly.

    Heat Up: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the veggie mixture. Sauté for about 5-7 minutes until veggies are tender and fragrant. Remove from heat and set aside.

      Assemble Quesadillas: Lay one tortilla in the skillet (you may need to work in batches). Sprinkle 1/4 cup of cheese on one half of the tortilla. Spoon a generous amount of the veggie mixture over the cheese, then fold the tortilla in half to cover the filling.

        Cook the Quesadillas: Add 1/2 tablespoon of olive oil and gently press down the quesadilla with a spatula. Cook for about 3-4 minutes on one side until golden brown and crispy, then carefully flip and cook for another 3-4 minutes on the other side.

          Slice and Serve: Once both sides are golden and the cheese has melted, remove the quesadilla from the skillet and let it rest for a minute before slicing into wedges. Serve warm with a side of salsa verde for dipping.
