2 large eggs

1 small onion, finely chopped

2 cloves garlic, minced

2 green onions, sliced

2 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce (or vegetarian alternative)

1 teaspoon sesame oil

Salt and pepper to taste

Optional: Cooked protein (chicken or shrimp), if desired

Prepare the Ingredients: If using day-old rice, break apart any clumps. Measure out the vegetables and sauces to streamline cooking.

    Scramble the Eggs: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium heat. Beat the eggs in a bowl, then pour them into the skillet. Stir gently until scrambled and fully cooked. Remove the eggs from the skillet and set them aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the chopped onion and sauté for 2-3 minutes until softened. Then add the minced garlic and cook for another 30 seconds until fragrant.
