1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup corn (fresh or frozen)

1 can (4 oz) diced green chilies

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper, to taste

½ cup sour cream

1 cup shredded cheese (Mexican blend or Monterey Jack)

8 corn or flour tortillas

2 cups salsa verde (store-bought or homemade)

Fresh cilantro, chopped (for garnish)

Avocado slices (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef Mix: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Add the chopped onion and minced garlic, cooking until softened, approximately 3-4 minutes.

      Combine Ingredients: Stir in the corn, diced green chilies, ground cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes, allowing the flavors to meld. Remove from heat and let cool slightly.

        Prepare the Tortillas: If using corn tortillas, warm them in a dry skillet for about 30 seconds on each side to make them pliable. Flour tortillas can usually be used directly.

          Assemble the Enchiladas: Spread a thin layer of salsa verde (about ½ cup) in the bottom of a 9x13 inch baking dish. Take one tortilla, add about ¼ cup of the beef mixture, a spoonful of sour cream, and a sprinkle of shredded cheese, then roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.

            Top with Salsa Verde and Cheese: Once all enchiladas are in the dish, pour the remaining salsa verde over the top, ensuring they are well covered. Sprinkle the remaining shredded cheese evenly over the top.

              Bake: Cover the dish with aluminum foil (shiny side down) and bake for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
