To create the perfect BBQ chicken and pineapple wraps, the first step is ensuring your tortillas are warm and pliable. Warm tortillas are significantly easier to work with, reducing the risk of tearing when you wrap them around your fillings. The heat softens the tortilla, making it more flexible and allowing it to better accommodate the ingredients.

Ingredients

2 cups cooked chicken, shredded or diced

1 cup BBQ sauce (your favorite brand or homemade)

1 cup fresh pineapple, diced (or canned, drained)

1 cup shredded cheddar cheese

1/2 cup red bell pepper, finely chopped

1/2 cup green onions, sliced

4 large flour tortillas (or whole wheat for a healthier option)

1 cup lettuce, shredded (romaine or iceberg)

Olive oil spray (for grilling)

Salt and pepper to taste

Instructions

Prepare the Chicken: If you haven't already done so, cook the chicken in your preferred style (grilled, roasted, or sautéed) until fully cooked. Once cooled slightly, shred or dice the chicken.

Combine Ingredients: In a large mixing bowl, combine the shredded or diced chicken with BBQ sauce, diced pineapple, shredded cheddar cheese, chopped red bell pepper, and sliced green onions. Mix well until all ingredients are evenly coated with the BBQ sauce. Season with salt and pepper to taste.

Lay Out the Tortillas: Warm the flour tortillas slightly in a microwave for about 10-15 seconds to make them more pliable. Lay each tortilla flat on a clean surface.

Fill the Wraps: On each tortilla, start with a layer of shredded lettuce, then add a generous amount of the BBQ chicken and pineapple mix in the center. Leave some space on the edges for folding.

Wrap It Up: Fold in the sides of the tortilla, then roll from the bottom up to create a wrap. Press down gently to secure the filling inside and ensure it holds its shape.

Grill the Wraps (optional): Preheat a grill or grill pan over medium heat. Lightly spray the outside of each wrap with olive oil. Place the wraps seam-side down on the grill and cook for about 2-3 minutes on each side until golden brown and slightly crispy. This step adds a nice texture and enhances the flavor.

Slice and Serve: Remove the wraps from the grill and let them cool for a minute. Slice each wrap in half and serve with extra BBQ sauce on the side for dipping, if desired. You can also add some extra fresh pineapple chunks or a side salad.
