Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup shredded sharp cheddar cheese

1 cup breadcrumbs (Panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

Cooking spray or olive oil for frying

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chicken: In a mixing bowl, combine the cut chicken pieces with garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure even coating.

Set Up Breading Station: In three separate bowls, place the flour in one, beat the eggs in another, and combine breadcrumbs with shredded cheddar cheese in the third.

Coat the Chicken: Take a piece of chicken, roll it in the flour until fully coated and shake off excess. Next, dip it into the beaten eggs, allowing excess to drip off before finally coating it with the breadcrumb and cheddar mixture. Make sure it’s well-covered, then place it on the prepared baking sheet. Repeat for all chicken pieces.

Spray and Bake: Lightly spray the coated chicken bites with cooking spray or drizzle with olive oil for added crispiness. Bake in the preheated oven for 20-25 minutes, or until golden brown and chicken is cooked through (internal temperature should reach 165°F/74°C).

Serve: Once baked, let the chicken bites cool slightly before serving. Garnish with fresh parsley if desired. Serve with your favorite dipping sauces, such as ranch, honey mustard, or BBQ sauce.
