Ingredients
  

1 lb ground turkey or beef

1 cup diced onion

1 cup diced bell pepper (any color)

2 cloves garlic, minced

1 medium sweet potato, peeled and diced

1 cup butternut squash, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) crushed tomatoes

2 cups vegetable or chicken broth

1 cup corn (fresh or frozen)

2 tbsp chili powder

1 tbsp cumin

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, sliced green onions, chopped cilantro, or avocado

Instructions
 

Sauté the Base: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

    Brown the Meat: Push the sautéed vegetables to the side of the pot and add the ground turkey or beef. Cook until browned, breaking it up with a spoon, about 5-6 minutes.

      Add Sweet Ingredients: Incorporate the diced sweet potato and butternut squash into the pot. Stir well to combine with the meat and vegetables.

        Season the Chili: Sprinkle in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Mix everything together to ensure the spices coat the ingredients well.

          Combine Liquids: Pour in the crushed tomatoes and broth. Stir to combine, ensuring all ingredients are mixed evenly.

            Simmer: Bring the chili to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the sweet potatoes and butternut squash are tender.

              Add Beans and Corn: Stir in the black beans, kidney beans, and corn. Allow the chili to simmer for another 10-15 minutes, uncovered, to thicken and meld the flavors. Adjust the seasoning if necessary.

                Serve: Ladle the chili into bowls and top with your choice of shredded cheese, sour cream, sliced green onions, chopped cilantro, or avocado.
