1 pound Italian sausage (mild or spicy, your choice)

1 pound baby yellow potatoes, halved

1 medium onion, diced

3 cloves garlic, minced

2 cups fresh kale, chopped

1 cup chicken or vegetable broth

1 teaspoon dried thyme

1 teaspoon paprika (smoked or sweet)

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

2 tablespoons olive oil

Optional garnish: sliced green onions or parsley

Brown the Sausage: In a skillet over medium heat, add olive oil and cook the Italian sausage until browned. Use a spatula to break it into bite-sized pieces as it cooks. This step adds flavor but can be skipped if desired.

    Prepare the Vegetables: In the crockpot, add the halved baby potatoes, diced onion, minced garlic, and chopped kale.

      Add Spices & Broth: Sprinkle the dried thyme, paprika, black pepper, and salt over the vegetables. Pour the chicken or vegetable broth on top, ensuring that everything is well coated.

        Combine Ingredients: If you browned the sausage, transfer the cooked sausage to the crockpot, mixing gently to combine all ingredients. If you’re skipping browning, simply add the uncooked sausage pieces directly into the crockpot.

          Slow Cook: Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours. The dish is ready when the potatoes are fork-tender and the sausage is cooked through.
