1 pound Italian sausage (mild or spicy, based on preference)

1 large onion, chopped

3 cloves garlic, minced

4 medium carrots, diced

2 medium potatoes, diced (Yukon Gold or red)

3 cups fresh kale, stems removed and chopped

1 can (14.5 oz) diced tomatoes, with juice

4 cups vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Sausage: In a skillet over medium heat, add the olive oil. Once hot, remove the sausage from its casing and crumble it into the skillet. Cook until browned, about 5-7 minutes. Drain excess fat, if needed.

    Sauté Vegetables: To the same skillet, add the chopped onion and garlic to the remaining sausage fat. Sauté until the onion is translucent, about 3-4 minutes.

      Combine Ingredients: In the crockpot, combine the browned sausage and sautéed onions and garlic with diced carrots, potatoes, diced tomatoes (with juices), and kale. Stir in vegetable or chicken broth, thyme, oregano, smoked paprika, salt, and pepper.

        Cook: Set the crockpot to low and cook for 6-8 hours or on high for 3-4 hours until the vegetables are tender.

          Finish the Stew: Stir in the apple cider vinegar 10 minutes before serving for an added layer of flavor. Taste and adjust seasonings as needed.
