2 cups elbow macaroni

4 cups vegetable broth

1 medium onion, finely chopped

2 cups fresh broccoli florets

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon olive oil

½ cup grated Parmesan cheese (for topping)

Optional: ½ cup breadcrumbs (for an added crunch)

Instructions
 

Sauté Vegetables: In a skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté until translucent, about 5 minutes. This enhances the flavor of the onion, preparing it for the slow cooking process.

    Prepare the Crockpot: In your crockpot, combine the vegetable broth, uncooked elbow macaroni, sautéed onion, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to ensure even distribution.

      Add Broccoli: Gently fold in the fresh broccoli florets, ensuring they are evenly dispersed throughout the macaroni mixture.

        Add Cheeses: Cut the softened cream cheese into smaller pieces and add it to the crockpot along with the shredded cheddar and mozzarella cheeses. Stir until everything is wellcombined; it might seem a bit thick but will loosen up as it cooks.

          Cook Low & Slow: Cover the crockpot and set it to low heat. Allow it to cook for 3 to 4 hours, stirring occasionally. If you prefer a creamier texture, you can add a splash of milk or more vegetable broth toward the end of cooking.
