Elote can be traced back to ancient civilizations in Mexico, where corn has been a staple food for thousands of years. The word "elote" itself comes from the Nahuatl word "elotl," which refers to the ears of corn. Over time, it evolved into a popular street food, with vendors grilling corn over open flames and dressing it with various toppings.

Ingredients

4 ears of fresh corn, husked and grilled

1/2 cup mayonnaise

1/4 cup sour cream

1/2 cup crumbled Cotija cheese (or feta cheese)

1/2 teaspoon garlic powder

1 teaspoon chili powder (adjust to taste)

1 tablespoon lime juice (plus extra wedges for serving)

1/4 cup chopped cilantro (for garnish)

Salt and pepper to taste

Corn chips (for serving, optional)

Instructions

Prep the Corn: Start by grilling the corn on a medium-high heat grill. Turn them occasionally for about 10-12 minutes until they are charred and tender. Once done, let them cool slightly before cutting the kernels off the cob.

Make the Sauce: In a mixing bowl, combine the mayonnaise, sour cream, crumbled Cotija cheese, garlic powder, chili powder, lime juice, salt, and pepper. Stir until you have a smooth and creamy mixture.

Combine the Ingredients: Add the grilled corn kernels to the sauce mixture. Mix everything together well until the corn is evenly coated.

Serve: Spoon the mixture into small cups or bowls. Top each serving with a sprinkle of additional Cotija cheese, chopped cilantro, and a dash more of chili powder for color and taste.

Garnish and Enjoy: Serve with lime wedges on the side for squeezing over the top. For an extra crunch, serve with a side of corn chips for dipping.
