Egg and Chili Breakfast Casserole

1 cup milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 cup shredded cheddar cheese

1 cup diced bell peppers (red and green for color)

1 cup cooked and crumbled chorizo (or turkey sausage for a lighter option)

1 cup canned black beans, rinsed and drained

1 small red onion, finely chopped

1-2 fresh jalapeños, seeded and diced (optional, for extra heat)

2 cups tortilla chips, roughly crushed

Fresh cilantro or parsley for garnish

Salsa or hot sauce for serving

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or a bit of oil.

    Mix the Egg Base: In a large bowl, whisk together the eggs, milk, salt, black pepper, smoked paprika, and garlic powder until well combined.

      Layer the Ingredients: Start by evenly spreading the crushed tortilla chips at the bottom of the prepared baking dish. Follow with the diced bell peppers, cooked chorizo, black beans, red onion, and jalapeños if using. Ensure the ingredients are distributed evenly.

        Add Cheese: Pour half of the egg mixture over the layered ingredients, allowing it to seep through. Sprinkle half of the shredded cheddar cheese on top.
