Easy Zucchini Pasta Bake

3 medium zucchinis, spiralized or thinly sliced

1 cup whole wheat pasta (penne or fusilli)

1 cup marinara sauce

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a pot of boiling salted water, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.

      Prepare the Zucchini: If using whole zucchinis, spiralize them or slice them thinly. If spiralizing, you may want to pat them dry with paper towels to remove excess moisture, preventing a watery bake.

        Mix the Cheese Filling: In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, the egg, minced garlic, Italian herbs, salt, and pepper. Mix well until combined.

          Combine Ingredients: In a large mixing bowl, toss the cooked pasta and zucchini together with the marinara sauce. Add the ricotta cheese mixture and stir until everything is evenly coated.

            Layer the Bake: In a greased 9x9-inch (or similar size) baking dish, pour half of the pasta-zucchini mixture into the bottom. Sprinkle with half of the remaining mozzarella cheese. Layer the rest of the pasta mixture on top, followed by the remaining mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once out of the oven, let the dish cool for a few minutes, then garnish with fresh basil before serving. Enjoy hot!
