Easy Veggie-Packed Quesadillas for Family Nights

Ingredients
  

4 whole wheat tortillas

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1 cup canned black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 small zucchini, grated

1/2 cup red onion, finely chopped

1 cup fresh spinach, roughly chopped

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper, to taste

Salsa or guacamole, for serving

Instructions
 

Prepare the Veggies: In a large bowl, combine the black beans, corn, bell pepper, zucchini, red onion, and spinach. Add in the olive oil, cumin, garlic powder, salt, and pepper. Mix well to ensure all the veggies are evenly coated with the seasonings.

    Assemble the Quesadillas: Heat a non-stick skillet over medium heat. Place one tortilla in the skillet. Sprinkle half of the cheese on one half of the tortilla. Spread a generous portion of the veggie mixture over the cheese, then top with the remaining cheese. Fold the tortilla in half to cover the filling.

      Cook the Quesadilla: Cook for about 3-4 minutes on one side, or until the bottom is golden and crispy. Carefully flip it over using a spatula and cook for another 2-3 minutes until the other side is also crispy and the cheese has melted.

        Repeat: Remove the quesadilla from the skillet and place it on a cutting board. Let it sit for a minute before cutting it into wedges. Repeat the process with the remaining tortillas and filling.

          Serve: Serve the quesadilla wedges warm with salsa or guacamole on the side for dipping.
