Easy Veggie-Packed Pasta Primavera in 30 Minutes

8 oz (225g) linguine or spaghetti

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, sliced

1 zucchini, sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 cup fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

½ cup grated Parmesan cheese (or vegan alternative)

Fresh basil leaves, for garnish

Optional: Red pepper flakes for heat

Instructions
 

Cook Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package directions until al dente. Reserve ½ cup of pasta water, then drain the rest and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Stir in the minced garlic and sauté for another 30 seconds.

      Add Veggies: Toss in the sliced red bell pepper, zucchini, cherry tomatoes, and broccoli florets. Sauté for 5-6 minutes, or until the vegetables are tender but still vibrant.

        Combine Ingredients: Add the cooked pasta to the skillet with the sautéed veggies. Mix in the fresh spinach, dried oregano, dried basil, and reserved pasta water. Stir everything together over low heat until the spinach wilts and everything is well combined.

          Season & Serve: Season with salt, pepper, and red pepper flakes (if using) to taste. Stir in the grated Parmesan cheese until melted and creamy. Remove from heat.

            Garnish: Serve immediately, garnished with fresh basil leaves and additional Parmesan if desired.
