Ingredients

1 pre-made puff pastry sheet (thawed if frozen)

3-4 medium ripe tomatoes, sliced

1 cup fresh basil leaves, roughly chopped

1 cup shredded mozzarella cheese (or a dairy-free alternative)

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Puff Pastry: Roll out the puff pastry sheet on a lightly floured surface, if needed, and place it onto the prepared baking sheet. Use a knife to score a 1-inch border around the edges to create a crust.

Mix Cheese Filling: In a medium bowl, combine the ricotta, mozzarella, Parmesan, minced garlic, salt, and pepper. Mix until well incorporated.

Spread the Cheese Mixture: Carefully spread the cheese mixture evenly within the bordered area of the puff pastry, leaving the edges clear.

Arrange Tomatoes: Layer the sliced tomatoes on top of the cheese filling, slightly overlapping them. Drizzle the olive oil and balsamic vinegar over the tomatoes and sprinkle with additional salt and pepper to taste.

Bake the Tart: Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and the tomatoes are tender.

Add Fresh Basil: Once baked, remove the tart from the oven and let it cool for a few minutes. Sprinkle the chopped fresh basil on top for an added burst of flavor.

Slice and Serve: Cut the tart into squares or wedges and serve warm or at room temperature. Garnish with extra basil leaves if desired.
