Easy Taco Rice Casserole

1 cup uncooked long-grain rice

2 cups beef or chicken broth

1 pound ground beef (or turkey)

1 packet taco seasoning mix (about 1 oz)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels, frozen or canned (drained)

1 cup diced tomatoes (canned with juices or fresh)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup salsa (mild, medium, or spicy depending on preference)

1 small onion, diced

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring the beef or chicken broth to a boil. Add the rice, cover, reduce heat, and simmer for about 15-20 minutes or until rice is tender and the liquid is absorbed. Remove from heat and fluff with a fork.

      Prepare the Beef Mixture: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a spatula, and cook until browned. Drain any excess fat.

        Season the Meat: Stir in the taco seasoning and cook for another 2-3 minutes, allowing the flavors to meld. If needed, season with salt and pepper to taste.

          Combine the Ingredients: In a large mixing bowl, combine the cooked rice, seasoned ground beef, black beans, corn, diced tomatoes, and salsa. Mix everything thoroughly until evenly combined.

            Assemble the Casserole: Transfer the mixture into a greased 9x13 inch (or similar) baking dish. Spread it out evenly and top with shredded cheddar cheese.

              Bake: Place the casserole in the preheated oven and bake for 20-25 minutes or until the cheese is melted, bubbly, and slightly golden.
