3 cloves garlic, minced

1 small onion, diced

1 cup mixed vegetables (peas, carrots, bell peppers)

2 large eggs, lightly beaten

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 green onions, sliced

Salt and pepper to taste

Prepare the Rice: If you haven't already, cook the jasmine rice according to package instructions. For best results, allow it to cool and dry in the fridge for a few hours or overnight.

    Sauté the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Remove from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and diced onion, sautéing until the onion becomes translucent. Then, stir in the mixed vegetables and cook for an additional 3-4 minutes, until they're tender.
