1 French baguette, sliced into 1/2-inch thick pieces

1 tablespoon olive oil

4 medium ripe peaches, pitted and thinly sliced

8 ounces goat cheese, softened

2 tablespoons honey

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Balsamic glaze, for drizzling

Fresh mint leaves, for garnish (optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Crostini: Arrange the sliced baguette pieces on a baking sheet. Brush one side with olive oil, then turn them over.
