Easy Peach Cobbler with Ice Cream

4 cups fresh peaches, peeled and sliced (or 2 cans of sliced peaches, drained)

1 cup granulated sugar, divided

1 tsp vanilla extract

1/2 tsp ground cinnamon

1 tablespoon lemon juice

1 cup all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1 cup whole milk

1/2 cup unsalted butter, melted

Additional ice cream for serving (vanilla or your favorite flavor)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peaches: In a large mixing bowl, combine the sliced peaches, 1/2 cup of sugar, vanilla extract, ground cinnamon, and lemon juice. Toss well to coat and set aside for about 10 minutes to allow the juices to mingle.

      Make the Batter: In another bowl, whisk together the flour, baking powder, salt, and the remaining 1/2 cup of sugar. Add the milk and melted butter, stirring until just combined. The batter will be lumpy, and that’s fine!

        Assemble the Cobbler: Pour the batter into a greased 9x13 inch baking dish, spreading it evenly. Spoon the peach mixture over the top of the batter, making sure to drizzle any juices from the bowl over everything.

          Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cobbler is golden brown and a toothpick inserted in the center comes out clean.

            Serve: Allow the peach cobbler to cool slightly before serving. Scoop portions into bowls and top with a generous scoop of ice cream. Enjoy warm!
