1 can (14 oz) diced tomatoes, with juices

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 medium yellow bell pepper, diced

1 cup fresh spinach, roughly chopped

1 small red onion, sliced

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon olive oil

1 cup shredded mozzarella cheese (or a dairy-free alternative)

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Pan: In a large, oven-safe skillet or a deep baking dish, drizzle the olive oil. Add in the sliced red onion and minced garlic, sautéing them over medium heat for about 2-3 minutes until fragrant.

      Layer the Vegetables: Add the sliced zucchini, diced yellow bell pepper, halved cherry tomatoes, and fresh spinach into the skillet. Stir well to combine all the vegetables, seasoning with salt, pepper, and the dried Italian herbs.

        Add the Diced Tomatoes: Pour the can of diced tomatoes over the vegetable mixture, including the juices. Stir gently to ensure everything is evenly coated in the tomato mixture.
