Ingredients

4 salmon fillets (about 6 ounces each)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon lemon zest

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, chopped

1 tablespoon capers (optional)

Lemon wedges, for serving

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a large baking dish. Pour the marinade over the salmon, making sure each fillet is well coated. Let it marinate for about 15 minutes while you prepare the other ingredients.

Add Vegetables: After marinating, scatter the halved cherry tomatoes and capers (if using) around the salmon in the baking dish.

Bake the Salmon: Transfer the baking dish to the preheated oven. Bake for about 15-18 minutes, or until the salmon flakes easily with a fork and is cooked through (internal temperature should be 145°F or 63°C).

Garnish and Serve: Remove from the oven and sprinkle with fresh basil. Serve hot with lemon wedges on the side for an extra pop of flavor.

Enjoy: Pair this dish with a glass of white wine or a salad for a complete romantic dinner experience!
