1/4 cup honey (or maple syrup for vegan option)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

2 cups dark chocolate chips (dairy-free for vegan option)

1 tablespoon coconut oil (optional, for a smoother chocolate coating)

1/4 cup crushed nuts (optional, for added crunch)

Instructions
 

Prepare Filling: In a mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until smooth and well mixed. The mixture should be thick and malleable.

    Shape Eggs: Using your hands, scoop out portions of the peanut butter mixture and shape them into egg-like ovals. Place them on a parchment-lined baking sheet. You should be able to make about 10-12 eggs, depending on size.

      Freeze Filling: Place the peanut butter eggs in the freezer for about 30 minutes to firm up.

        Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.

          Coat Eggs: Remove the peanut butter eggs from the freezer. Dip each egg into the melted chocolate, making sure to cover it completely. Using a fork, lift the egg out and allow excess chocolate to drip off. Place the coated egg back on the parchment paper.
