Ingredients

2 large cucumbers, thinly sliced

1 cup cherry tomatoes, halved

8 oz fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

Instructions

In a large mixing bowl, combine the sliced cucumbers, halved cherry tomatoes, and halved mozzarella balls.

Gently toss the ingredients to mix them well, being careful not to break the mozzarella.

Add the torn basil leaves to the bowl, and season the salad with salt and freshly ground black pepper.

Drizzle the extra virgin olive oil over the salad, followed by the balsamic glaze.

Toss everything lightly again to ensure the salad is well-coated with the dressing.

Let the salad sit for about 10 minutes to allow the flavors to meld together before serving.
