Easy Creamy Mushroom Pasta in 30 Minutes

8 ounces (225g) of pasta (fettuccine, linguine, or your choice)

2 tablespoons olive oil

1 tablespoon unsalted butter

1 pound (450g) fresh mushrooms (cremini, button, or a mix), sliced

4 cloves garlic, minced

1 teaspoon dried thyme

1 cup vegetable or chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Optional: Red pepper flakes for a spicy kick

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain and set the pasta aside.

    Sauté the Mushrooms: In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted, add the sliced mushrooms. Sauté for about 5-7 minutes until the mushrooms are browned and have released their moisture.

      Add Garlic and Seasoning: Add the minced garlic and dried thyme to the skillet. Cook for an additional 1-2 minutes until fragrant. Season with salt and pepper.

        Create the Sauce: Pour in the vegetable or chicken broth and bring to a gentle simmer. Let it cook for about 2-3 minutes to reduce slightly.

          Add Cream and Cheese: Lower the heat and stir in the heavy cream, mixing well. Gradually add the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
