Ingredients

1 (30 oz) bag frozen hashbrowns, thawed

2 cups cottage cheese (low-fat or regular)

2 cups shredded cheddar cheese (divided)

1 cup sour cream

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1/2 teaspoon garlic powder

2 green onions, sliced (for garnish)

Cooking spray or olive oil (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.

Prepare the Hashbrown Base: In a large mixing bowl, combine the thawed hashbrowns, diced onion, minced garlic, salt, pepper, and paprika. Stir until evenly mixed.

Create the Cheese Mixture: In another large bowl, combine the cottage cheese, 1 1/2 cups of the shredded cheddar cheese, sour cream, and garlic powder. Mix well until fully combined.

Combine Ingredients: Gently fold the hashbrown mixture into the cheese mixture until everything is thoroughly combined.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.

Top with Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the casserole.

Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the top is golden and bubbly.

Garnish and Serve: Once done, remove from the oven and let it cool for about 5-10 minutes. Garnish with sliced green onions before serving.
