2 cups fresh corn kernels (about 2-3 ears of corn)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup green onions, chopped

1/4 cup fresh cilantro, chopped (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon baking powder

Salt and pepper, to taste

Olive oil or vegetable oil, for frying

Prep the Ingredients: Start by peeling the zucchini and grating it using a box grater. Place the grated zucchini in a clean kitchen towel and wring out the excess moisture to avoid soggy fritters.

    Combine the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, garlic powder, onion powder, baking powder, salt, and pepper. Whisk them together until well blended.

      Mix the Wet Ingredients: In another bowl, whisk the eggs. Then add the grated zucchini, fresh corn kernels, chopped green onions, and cilantro (if using). Mix until everything is well incorporated.

        Combine Mixtures: Gradually fold the wet mixture into the dry ingredients until just combined. Be careful not to overmix; it's okay if there are a few lumps.
