½ cup granulated sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

½ tsp ground cinnamon

1 large egg

1 cup milk (or buttermilk for richer flavor)

⅓ cup vegetable oil or melted butter

1 tsp vanilla extract

¼ cup packed brown sugar (for filling)

1 tsp ground cinnamon (for filling)

Optional: 1 cup chopped nuts or raisins for added texture (if desired)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease well.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ½ tsp ground cinnamon until well combined.

      Prepare Wet Ingredients: In another bowl, beat the egg. Then add milk, vegetable oil (or melted butter), and vanilla extract, mixing until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix! A few lumps are perfectly fine.

          Make the Filling: In a small bowl, combine brown sugar and 1 tsp ground cinnamon. This will be your delicious filling!
