1 medium butternut squash (about 2-3 lbs), peeled, seeded, and diced

1 lb Italian sausage (sweet or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 cups low-sodium chicken or vegetable broth

2 cups kale, chopped (or spinach)

1 can (14 oz) diced tomatoes, with juices

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon balsamic vinegar (optional, for added depth)

Fresh parsley or cilantro, chopped, for garnish (optional)

Instructions
 

Cook the sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Remove the sausage from the pot and set aside.

    Sauté vegetables: In the same pot, add the diced onion and cook until translucent, about 4-5 minutes. Add the minced garlic and sauté for another minute until fragrant.

      Add butternut squash: Stir in the diced butternut squash, and cook for about 5 minutes, allowing it to slightly caramelize at the edges.

        Combine ingredients: Return the cooked sausage to the pot. Pour in the chicken or vegetable broth, kale, diced tomatoes (with juices), thyme, smoked paprika, salt, and pepper. Bring the mixture to a boil.

          Simmer: Reduce the heat to low and let the soup simmer uncovered for about 20-25 minutes, or until the butternut squash is tender when pierced with a fork.
