Ingredients

1 pound ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1/2 cup beef broth

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded green cabbage

1 cup shredded carrots

1/2 cup radishes, thinly sliced

1/4 cup mayonnaise

1 tablespoon lime juice

1 teaspoon honey

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Season the Meat: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 6-8 minutes. Stir in the taco seasoning and beef broth. Simmer for 5-7 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Prepare the Crunchy Slaw: In a medium bowl, combine the shredded cabbage, shredded carrots, and sliced radishes. In a separate small bowl, whisk together the mayonnaise, lime juice, and honey until smooth. Pour this dressing over the slaw and toss until everything is evenly coated.

Warm the Tortillas: In a dry skillet or on a griddle, warm the tortillas over medium heat for about 30 seconds on each side, until pliable.

Assemble the Tacos: To assemble, spoon the beef mixture onto the warmed tortillas. Top with a generous helping of crunchy slaw and garnish with fresh cilantro.

Serve: Serve the tacos with lime wedges on the side for an extra burst of flavor. Enjoy your Crunchy Fiesta Beef Tacos!
