Ingredients

For the Beef Filling:

1 lb (450g) ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

¼ cup beef broth (or water)

1 tablespoon olive oil

For the Crunchy Corn Shells:

12 corn tortillas

Cooking spray or olive oil for brushing

Pinch of salt

Taco Toppings:

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheddar cheese

½ cup sour cream

¼ cup chopped fresh cilantro

Sliced jalapeños (optional)

Instructions

Prepare the Beef Filling:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until softened.

      - Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

        - Stir in the chili powder, cumin, paprika, salt, and black pepper. Mix well to incorporate the spices, then pour in the beef broth. Simmer for about 5 minutes until the mixture thickens slightly. Remove from heat.

          Make the Crunchy Corn Shells:

            - Preheat your oven to 375°F (190°C).

              - Lightly brush both sides of each corn tortilla with cooking spray or olive oil, then sprinkle a pinch of salt.

                - To shape the tortillas, place them in muffin tins, draping them over the sides to form cups. Bake in the preheated oven for about 10-12 minutes, or until they are golden brown and crispy. Keep an eye on them to avoid burning.

                  Assemble the Tacos:

                    - Once the shells are cooled slightly, fill each crunchy corn shell generously with the beef filling.

                      - Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and fresh cilantro. Add sliced jalapeños if desired.

                        Serve:

                          - Place the assembled tacos on a platter and serve immediately with additional sour cream and toppings on the side.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4-6 tacos (makes 12 shells)
