1 lb ground beef (preferably lean)

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 medium tomato, diced

1 avocado, sliced

1 cup shredded cheddar cheese

1 cup salsa

1 head of iceberg or romaine lettuce, leaves separated

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Instructions
 

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.

    Add Garlic: Stir in minced garlic and cook for another 30 seconds until fragrant.

      Brown the Beef: Add ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.

        Season: Mix in taco seasoning, black beans, and corn. Stir to combine and cook for an additional 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

          Prepare Lettuce Wraps: While the beef mixture is cooking, prepare your lettuce leaves by washing and patting them dry. Choose the largest leaves for easy wrapping.
