Easy BBQ Chicken Skewers with Fresh Veggies

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup BBQ sauce (store-bought or homemade)

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 zucchini, sliced into 1/2-inch thick rounds

1 red onion, cut into chunks

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before use)

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken cubes with half of the BBQ sauce, garlic powder, salt, and pepper. Mix well to ensure all pieces are coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Veggies: In a separate bowl, toss the bell peppers, zucchini, and red onion with olive oil, salt, and pepper to taste.

      Preheat the Grill: Heat your grill or grill pan to medium-high heat (about 400°F). If using wooden skewers, ensure they have soaked to prevent burning.

        Assemble the Skewers: Thread the marinated chicken and the prepared veggies onto the skewers, alternating between chicken and vegetables for a colorful presentation.

          Grill the Skewers: Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F) and has nice grill marks.
