Easy BBQ Chicken Quesadillas for Dinner

2 boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn (canned or frozen)

4 large flour tortillas

2 tablespoons olive oil

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream or guacamole (for serving, optional)

Instructions
 

Cook the Chicken: Start by preheating your grill or skillet over medium heat. Season the chicken breasts with salt and pepper, then grill or cook them in a skillet for about 6-8 minutes per side, or until they reach an internal temperature of 165°F (75°C).

    Shred the Chicken: Allow the chicken to rest for a couple of minutes. Once cooled slightly, shred the chicken using two forks and mix it with 1/2 cup of BBQ sauce until well-coated.

      Prepare the Quesadilla Filling: In a mixing bowl, combine the shredded chicken, remaining BBQ sauce, red onion, and corn. Set aside.

        Assemble the Quesadillas: Lay a tortilla flat on a clean surface. On one half of the tortilla, sprinkle a layer of cheddar and mozzarella cheese, followed by an ample scoop of the BBQ chicken mixture. Sprinkle with a little more cheese on top of the chicken for extra gooeyness, then fold the other half of the tortilla over.

          Cook the Quesadillas: Heat 1 tablespoon of olive oil in a skillet over medium heat. Place the folded quesadilla into the skillet and cook for about 3-4 minutes on one side until golden and crispy. Carefully flip it over and add another tablespoon of olive oil to the skillet if needed. Cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
