1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large tortillas (flour or whole wheat)

Prepare Chicken Mixture: In a mixing bowl, combine the shredded chicken with BBQ sauce. Make sure the chicken is evenly coated in the sauce. Add diced red onion if using, and mix well.

    Assemble Quesadillas: Lay one tortilla flat on a clean surface. On half of the tortilla, sprinkle a layer of mozzarella cheese, followed by a layer of the BBQ chicken mixture, then top with cheddar cheese. Fold the tortilla in half to cover the filling.

      Cook Quesadillas: Heat a large skillet or frying pan over medium heat and add olive oil or spray with cooking spray. Once hot, place the folded quesadilla in the skillet. Cook for about 3-5 minutes on one side until golden and crispy.
