Easy BBQ Chicken and Sweet Potato Skillet

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 cup bell peppers, diced (any color)

1 small red onion, diced

3 cloves garlic, minced

1 cup BBQ sauce (your favorite brand)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

Salt and pepper, to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they are fork-tender and lightly browned.

    Cook the Chicken: Move the sweet potatoes to one side of the skillet and add the chicken pieces to the other side. Season the chicken with smoked paprika, chili powder, salt, and pepper. Cook for about 5-7 minutes, stirring often, until the chicken is browned and cooked through.

      Add the Vegetables: Add the diced bell peppers, red onion, and minced garlic to the skillet. Stir well to combine all ingredients and cook for another 3-4 minutes until the vegetables are softened.

        Combine with BBQ Sauce: Pour the BBQ sauce over the chicken and vegetables. Stir to coat everything evenly in the BBQ sauce and cook for an additional 2-3 minutes until everything is heated through.

          Garnish and Serve: Remove from heat, sprinkle with fresh parsley if desired, and serve warm straight from the skillet.
