Easy Balsamic Vinaigrette Pasta Bake

12 oz penne pasta

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 red bell pepper, diced

1 cup fresh spinach, roughly chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup balsamic vinaigrette (store-bought or homemade)

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the zucchini and red bell pepper, cooking for 5-7 minutes until tender. Stir in the cherry tomatoes and spinach, cooking until the spinach is wilted (about 2-3 minutes). Season with salt and pepper.

        Combine Ingredients: In a large mixing bowl, toss together the cooked pasta, sautéed vegetables, balsamic vinaigrette, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined.

          Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish, spreading it evenly. Top with the remaining mozzarella and Parmesan cheese.

            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is golden and bubbly.

              Serve and Garnish: Once out of the oven, let it sit for a few minutes. Garnish with fresh basil leaves if desired. Serve warm!
