Ingredients

4 cod fillets (6 oz each)

2 tablespoons olive oil

3 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon smoked paprika

Fresh parsley, chopped (for garnish)

Lemon slices (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Dish: Lightly grease a baking dish with cooking spray or a drizzle of olive oil to prevent sticking.

Make the Marinade: In a small bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, salt, black pepper, dried oregano, and smoked paprika. Stir well to mix all the ingredients.

Coat the Cod: Place the cod fillets in the baking dish. Pour the marinade over the cod, ensuring each fillet is evenly coated. You can gently rub the marinade into the fish.

Bake the Cod: Cover the baking dish with aluminum foil and bake in the preheated oven for 15 minutes. Then, remove the foil and bake for an additional 5-10 minutes, or until the fish flakes easily with a fork and is opaque in color.

Garnish and Serve: Once the cod is cooked, remove it from the oven and let it rest for a couple of minutes. Garnish the dish with fresh parsley and serve with lemon slices on the side for an extra zing.
