2 salmon fillets (6 oz each)

2 medium sweet potatoes, peeled and diced

1/4 cup BBQ sauce (your favorite brand)

2 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare the sweet potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

      Roast the sweet potatoes: Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 minutes.

        Prepare the salmon: While the sweet potatoes are baking, brush the salmon fillets generously with BBQ sauce on both sides.

          Combine and bake: After 15 minutes, remove the baking sheet from the oven. Push the sweet potatoes to one side and place the BBQ-glazed salmon fillets on the other side. Return the sheet to the oven and bake for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

            Garnish and serve: Once done, remove from the oven, sprinkle fresh parsley on top for garnish, and serve with lemon wedges on the side for an extra burst of flavor.
