1 lb assorted mushrooms (cremini, shiitake, and button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup Marsala wine

1 cup vegetable broth

2 tablespoons olive oil

1 tablespoon unsalted butter

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Cooked pasta or rice, for serving (optional)

Instructions
 

Prepare the Ingredients:

    Clean and slice the assorted mushrooms, chop the onion, and mince the garlic.

      Sauté the Aromatics:

        In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic and sauté for another minute until fragrant.

          Cook the Mushrooms:

            Increase the heat to medium-high and add the sliced mushrooms to the skillet. Season with a pinch of salt and pepper. Cook until the mushrooms are browned and have released their moisture, about 7-10 minutes, stirring occasionally.

              Add the Herbs:

                Stir in the fresh thyme and rosemary, cooking for an additional minute to release their flavors.

                  Deglaze with Marsala:

                    Carefully pour in the Marsala wine, scraping up any brown bits stuck to the bottom of the skillet. Bring to a simmer and let it cook for about 5 minutes, allowing the flavors to meld and the alcohol to evaporate slightly.

                      Add the Broth:

                        Pour in the vegetable broth and bring the mixture to a gentle simmer. Cook for another 5-7 minutes until the sauce has thickened slightly. Taste and adjust seasoning with salt and pepper as needed.

                          Finish with Butter:

                            Stir in the unsalted butter until melted and well combined. This adds a beautiful richness to the sauce.

                              Serve:
