200g udon noodles

2 tablespoons white miso paste

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

250g mixed mushrooms (shiitake, portobello, and enoki), sliced

2 cloves garlic, minced

1 small onion, sliced

1 carrot, julienned

2 cups spinach or bok choy, cleaned

4 cups vegetable broth

1 teaspoon fresh ginger, grated

1 tablespoon sesame seeds, toasted

Green onions, sliced for garnish

Salt and pepper to taste

Instructions
 

Cook the Udon: In a large pot, bring water to a boil. Add the udon noodles and cook according to the package instructions (usually around 3-6 minutes). Drain and set aside.

    Prepare the Miso Mix: In a small bowl, combine the white miso paste, soy sauce, and sesame oil. Mix until smooth and set aside.
