200g udon noodles

250g mixed mushrooms (shiitake, cremini, and oyster), sliced

2 tablespoons miso paste (preferably reddish or white)

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, thinly sliced

4 cups vegetable broth

1 tablespoon mirin (optional)

1 teaspoon fresh ginger, grated

2 green onions, sliced for garnish

1 tablespoon sesame seeds, toasted (for garnish)

1 handful of fresh spinach or bok choy (for added greens)

Salt and pepper to taste

Instructions
 

Cook the Udon Noodles: In a large pot of boiling water, cook the udon noodles according to package instructions. Once cooked, drain and set aside. Rinse under cold water to stop the cooking process and prevent sticking.

    Sauté Aromatics: In a large skillet or wok, heat the sesame oil and olive oil over medium heat. Add the sliced onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

      Incorporate the Mushrooms: Add the sliced mushrooms to the skillet and cook until they are soft and tender, about 5-7 minutes. Season with a pinch of salt and pepper.

        Create the Sauce: In a small bowl, mix together the miso paste, soy sauce, mirin (if using), and grated ginger. Once the mushrooms are cooked, add this mixture to the skillet, stirring well to combine. Cook for another 2 minutes to allow the flavors to meld.

          Add Broth: Pour the vegetable broth into the skillet, stir, and bring the mixture to a gentle simmer. Allow it to simmer for about 5 minutes, tasting and adjusting seasoning as necessary.
