Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups marinara sauce (store-bought or homemade)

2 cups cooked pasta (penne or rotini work well)

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

1 cup fresh spinach (optional, for added nutrients)

Fresh basil or parsley, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Layer Ingredients: In a large, deep baking dish (approximately 9x13 inches), combine the chopped chicken pieces, marinara sauce, cooked pasta, garlic powder, Italian seasoning, salt, and pepper. If you are using spinach, fold it in at this stage.

Mix Well: Stir all the ingredients together until the chicken and pasta are evenly coated with sauce.

Add Cheese: Sprinkle the mozzarella and Parmesan cheeses evenly on top of the mixture. Make sure the cheese covers the entire surface for a delicious, gooey result.

Bake: Cover the baking dish tightly with aluminum foil to prevent the casserole from drying out. Bake in the preheated oven for 30 minutes.

Uncover and Finish: After 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (75°C).

Garnish: Once out of the oven, let the casserole rest for a few minutes. Garnish with fresh basil or parsley before serving, if desired.

Serve and Enjoy: Scoop out portions and enjoy this flavorful, comforting casserole that's perfect for a busy weeknight dinner!
