Ingredients

2 ripe dragonfruits (pitaya), peeled and cubed

1 cup unsweetened shredded coconut

1 cup rolled oats

½ cup all-purpose flour (or gluten-free alternative)

½ cup brown sugar (or coconut sugar)

½ cup unsalted butter, melted (or coconut oil for a dairy-free option)

1 tsp vanilla extract

½ tsp cinnamon

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a baking dish (about 8x8 inches).

Prepare the Dragonfruit: In a medium bowl, toss the cubed dragonfruit with a tablespoon of brown sugar and a pinch of salt. Spread the dragonfruit evenly in the prepared baking dish.

Make the Crumble Topping: In a large mixing bowl, combine the shredded coconut, rolled oats, flour, brown sugar, cinnamon, and a pinch of salt. Mix well to ensure all dry ingredients are evenly distributed.

Add the Wet Ingredients: Pour the melted butter (or coconut oil) and vanilla extract into the dry mixture. Stir until thoroughly combined, and the mixture resembles a crumbly texture.

Assemble the Dish: Sprinkle the crumble topping generously over the dragonfruit layer in the baking dish, ensuring even coverage.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes or until the topping is golden brown and the dragonfruit juice is bubbling around the edges.

Cool and Serve: Remove from the oven and let it cool slightly. Serve warm, optionally garnished with fresh mint leaves for a pop of color and flavor.
