Ingredients

3 ripe bananas, mashed

1/3 cup melted coconut oil (or unsalted butter)

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 cup chocolate chips (dark or milk chocolate, based on preference)

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Combine Wet Ingredients: In a large mixing bowl, add the mashed bananas and mix in the melted coconut oil. Stir until well combined. Then, add the brown sugar and granulated sugar. Mix well until there are no sugar clumps.

Add Eggs and Vanilla: Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract until smooth.

Mix Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, all-purpose flour, and cocoa powder. Make sure there are no lumps in the dry mixture.

Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the banana mixture. Stir gently until just combined. Be careful not to overmix to keep the bread light and fluffy.

Fold in Chocolates and Nuts: Gently fold in the chocolate chips and nuts (if using) until evenly distributed throughout the batter.

Pour into Pan and Bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake in the preheated oven for 55-70 minutes, or until a toothpick inserted into the center comes out clean (a few moist crumbs are okay).

Cool and Serve: Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing. Enjoy your Double Chocolate Banana Bread fresh, or toasted with a pat of butter!
