Ingredients

1 ½ cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

¼ tsp ground cloves

½ tsp salt

1 cup granulated sugar

½ cup brown sugar (packed)

½ cup vegetable oil

1 cup canned pumpkin puree (not pumpkin pie filling)

2 large eggs

1 tsp vanilla extract

½ cup chopped walnuts or pecans (optional)

Cream cheese frosting (optional for serving)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, cloves, and salt until well combined. Set aside.

Combine Sugars and Wet Ingredients: In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix until creamy.

Add Pumpkin and Eggs: Stir in the pumpkin puree, eggs, and vanilla extract until everything is well blended and smooth.

Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, using a spatula or wooden spoon to fold it together until just combined. Be careful not to over-mix – a few lumps are okay.

Add Nuts (if using): Gently fold in the chopped walnuts or pecans, if desired, to add a delightful crunch.

Pour and Bake: Pour the batter into the prepared baking pan, spreading it out evenly. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Frost (if desired): Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. If you like, top with cream cheese frosting for an extra indulgence!
