1 teaspoon salt

1 packet (2¼ teaspoons) instant yeast

1/2 cup warm milk (110°F)

2 large eggs

1/4 cup unsalted butter, melted

For the Fillings:

1/2 cup pastry cream (store-bought or homemade)

1/4 cup chocolate chips (optional)

Zest of 1 lemon (optional)

For the Butter Mixture:

1/2 cup unsalted butter, softened

1/4 cup brown sugar

1 tablespoon ground cinnamon

For Dusting:

Powdered sugar

Instructions

Prepare the Dough:

In a large mixing bowl, combine the flour, sugar, salt, and yeast. In a separate bowl, whisk together the warm milk, eggs, and melted butter. Gradually pour the wet mixture into the dry ingredients and stir until a dough forms.

      Knead the Dough:

Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the kneaded dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.

          Make the Filling:

While the dough is rising, prepare your fillings. If using pastry cream, ensure it is chilled and ready. Mix the chocolate chips and lemon zest into the pastry cream if desired.

              Prepare the Butter Mixture:

In a small bowl, combine the softened butter, brown sugar, and cinnamon. Mix until well combined to create a cinnamon butter.

                  Roll Out the Dough:

Once the dough has risen, punch it down and roll it out on a floured surface into a large rectangle (about 16x12 inches). Spread the cinnamon butter mixture evenly over the dough.

                      Shape the Cruffins:

Starting from one of the long edges, roll the dough tightly into a log. Cut the log into 12 equal pieces. Grease a muffin tin and place each piece cut-side up into the muffin cups. Use your fingers to create a well in the center of each piece and fill it with pastry cream.

                          Second Rise:

Cover the filled muffin tin with a kitchen towel and let the cruffins rise for an additional 30 minutes.

                              Bake the Cruffins:

Preheat your oven to 375°F (190°C). Bake the cruffins for 20-25 minutes, or until they are golden brown and puffed up.

                                  Cool and Dust:

Remove the cruffins from the oven and let them cool slightly before transferring them to a wire rack. Dust with powdered sugar before serving.

                                      Enjoy:

Serve warm, and enjoy the delicious layers of flaky, buttery dough filled with creamy goodness!
