Ingredients

1 cup Medjool dates, pitted and chopped

1/2 cup unsweetened cocoa powder

1/2 cup almond flour

1/3 cup coconut oil, melted

1/4 cup maple syrup or honey

2 large eggs

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 teaspoon baking powder

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup chopped walnuts or pecans (optional)

Instructions

Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

Blend the Dates: In a food processor, combine the chopped Medjool dates with a tablespoon of water. Blend until you achieve a smooth, sticky paste. If needed, add a little more water until the desired consistency is reached.

Mix Wet Ingredients: In a large bowl, whisk together the melted coconut oil, maple syrup (or honey), eggs, and vanilla extract until well combined.

Combine Dry Ingredients: In another bowl, sift together the cocoa powder, almond flour, sea salt, and baking powder. Mix until evenly combined.

Combine Mixtures: Gradually fold the dry ingredients into the wet mixture using a spatula. Stir until just combined, avoiding overmixing.

Add Chocolate Chips and Nuts: Gently fold in the dark chocolate chips and walnuts or pecans if using.

Pour and Spread: Transfer the brownie batter into the prepared baking pan and spread it evenly.

Bake: Bake for 20-25 minutes or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs attached.

Cool Down: Remove from the oven and let the brownies cool in the pan for about 15 minutes, then lift them out using the parchment paper. Place on a wire rack to cool completely before slicing.

Serve and Enjoy: Cut into squares and serve! Enjoy these rich, fudgy brownies as a dessert, snack, or healthy treat!
