2 large eggs

1 cup milk

½ cup vegetable oil

1 cup boiling water

For the Peanut Butter Frosting:

1 cup creamy peanut butter

½ cup unsalted butter, room temperature

3 cups powdered sugar

¼ cup heavy cream

1 teaspoon vanilla extract

For Garnish:

Dark chocolate shavings

Chopped peanuts

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Prepare the Dry Ingredients: In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until fully combined.

Mix the Batter: Gradually add the wet mixture to the dry ingredients, mixing until just combined. Slowly stir in the boiling water until the batter is smooth. (It will be thin.)

Bake the Cakes: Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Make the Peanut Butter Frosting: In a large bowl, beat together the peanut butter and unsalted butter until creamy. Gradually add the powdered sugar, alternating with the heavy cream, and beat until smooth. Mix in the vanilla extract.

Assemble the Cake: Once the cakes have cooled, place one cake layer on a serving platter. Spread a generous layer of peanut butter frosting on top. Place the second layer on top of the frosting.

Frost the Cake: Use the remaining frosting to cover the top and sides of the cake evenly.

Garnish and Serve: Decorate the top of the cake with dark chocolate shavings and chopped peanuts. Slice and serve!
